Kale Salad with Warm Cranberry Almond Vinaigrette

Serves: 2-4


Directions 

Heat 2 tablespoons oil in a large sauté pan over medium-high heat. Add onion and sauté for at least 5 minutes or until tender.

Add garlic and sauté for 1 minute. Then add cranberries, vinegar, honey, lemon juice and zest; stir to combine. Season with salt and pepper.

In a large bowl, toss kale with olive oil and a pinch of salt. Massage kale with your fingers for 1 minute until tender. Add in cranberry/onion mixture and almonds, toss to combine.

Ingredients

3 tablespoon olive oil, divided

1 small onion, peeled and thinly sliced

3 cloves garlic, coarsely chopped

1 cup dried cranberries

2 tablespoon raspberry vinegar

2 teaspoons pure maple syrup

Juice and zest of half a lemon

1/8 teaspoon salt

1/8 teaspoon black pepper

1 bunch kale

¼ cup sliced almonds

 

Cucumber Tomato Onion Salad

INSTRUCTIONS

1.    Chop the onions, tomatoes, cucumbers, radishes, wash and drain well. * Add to a bowl.

2.    Add the veggies and the rest of the ingredients to a bowl. Taste and adjust salt and heat. Serve.

 

NOTES

* To reduce the strong sharp onion flavor, soak the chopped onion in water for 15 minutes. Drain and then use. 

Variations:
Add 2 tbsp of chopped mint.
Add a generous pinch of kala namak (Indian Sulfur black salt) or ¼ tsp or more chaat masala to taste.
Add ½ tsp roasted ground cumin or coriander powder.
Add ½ cup or more non dairy yogurt and ½ tsp ground cumin and mix in to make raita kind of yogurt dip.

Vegan Southwest Tossed Salad with Creamy Avocado Dressing

(serves 8)

• 1 head romaine, rinsed, dried, and outer leaves removed • 1 c canned no-salt-added black beans, drained and rinsed • 1 c frozen corn
• 1 yellow bell pepper, diced
• 1 c grape tomatoes, halved
• 1/4 c red onion, diced
• 1/4 c cilantro, chopped
• 1 avocado, diced

Dressing
• 1/4 avocado
• 1 clove garlic
• 1/4 c olive oil
• 1⁄2 tsp hot sauce optional
• juice of 2 limes
• 1 tsp Florida cane crystals, or sugar
• salt, to taste
Instructions
Combine dressing ingredients in a food processor or blender and blend until smooth. Set aside.
In a large bowl, combine salad ingredients. Serve with dressing on the side.
